If you’re reading this, there’s a good chance you’ve eaten chicken salad before. You’ve probably had quite a few types of chicken salad as well.
Whether it’s classic or basic, with big or small chunks of chicken, or with/without extras, there’s no shortage of variety.
With this how-to, I’m showing you how to easily make chicken salad with a food processor. With this method, you can easily get a result with smaller pieces of chicken, which is my preference.
What You’ll Need
Chicken, mayo and spices
These are the bare minimum ingredients you’ll need. I recommend using white meat chicken; I think its subtle flavor works better than dark meat for this.
For the mayo, you can probably use anything sold as “mayo”, so use what you like.
I recommend using salt and pepper for the spices. You can probably use more, but it’s easy to over complicate things. Besides, I like using extra ingredients instead.

Extras
These help you spice up your chicken salad and make it your own. Things like fruits, nuts, seeds and sauces can be game changers.
Acidic ingredients like lemon juice can also help bring out flavors, and sugar can help round them out.
Food Processor
You probably guessed this by the title. The size isn’t as important as how much food you’re making.
The bigger the processor, the more you can make at once.
How to Enjoy Chicken Salad
It’s great on bread as a sandwich, either closed or open-faced.
It’s also great spread on crackers, or on top of a bed of greens, like spinach.

Ingredients
1 lb of cooked chicken, shredded*, 454 grams
1 apple, diced
1 tsp kosher salt**, 6 grams
large pinch of black pepper, about 1/2 tsp
1 cup mayo, 220 grams
1 tsp lemon juice, 5 grams
Preparation
Add all your ingredients to a food processor and process until broken down***.
Remove the processor blade, then taste and adjust seasoning as needed. Stir with a fork or spoon to incorporate any additional seasoning.
Notes
* Any kind of partially broken down state will work. You just need all the chicken to fit into the food processor.
** If your chicken was well-seasoned, you probably won’t need this much. I recommend starting with half, then adding more afterwards if necessary.
*** How far you go depends on your preference. If you like larger chunks, you’ll process for less time, and vice versa. Just make sure everything is well-combined before tasting, or you may add too much salt, lemon juice, etc.
