These mixed vegetable fajitas are easy, hearty, and healthy. They use multiple kinds of vegetables and lots of seasoning, making this an easy choice for a quick dinner.
What You Need to Make Them
To make these fajitas you’ll need things like onions, bell peppers, and some seasoning.
Onion
I like using yellow onion for this, but you can probably use any variety. Red onions may be a bit strong, but I can see them working in this as well.
Bell Pepper
For the peppers, I recommend using multiple different colors. I also recommend using no more than 1 green pepper; I personally find them worse, flavor-wise.
Seasoning
Your choice of taco or fajita seasoning mix should work great here. If you don’t have any or want to make your own, the recipe includes all the things you’ll need.
How to Make Mixed Vegetable Fajitas
Melt the Butter
The first thing you’ll want to do is melt the butter, which shouldn’t take long. I recommend using medium heat.
Add the Vegetables and Seasoning
Then you’ll add the vegetables and spices. You’ll need to cook them for a while, but also stir them every now and then to make sure nothing burns.
Finish Cooking, then Serve
After the vegetables have softened and there’s no water in the pan, you’re ready to serve. I recommend serving with things like sour cream, salsa, and refried beans.
Other Vegetable Options
If you want to use other vegetables, there are plenty of options. Anything that’s relatively soft after cooking, like zucchini, should work great. For something with texture, you may try adding in carrots or some cabbage.
You could even add something like potato, though you may want to parcook them a bit beforehand.

Ingredients
3 bell peppers*, sliced
1 medium yellow onion, sliced
1 tsp kosher salt, 6 grams
1 tsp chili powder, 3 grams
Large pinch of cumin, about 1/2 tsp
Pinch of oregano, about 1/4 tsp
Small pinch of cayenne, 1/8 tsp
2 Tbsps unsalted butter, 28 grams
Tortillas, as needed**, for serving
Preparation
Melt the butter in a large pan set over medium heat. Add the sliced onions, sliced peppers, and spices.
Cook for about 10 minutes, stirring occasionally.
Serve in tortillas with desired accoutrements***.
Notes
* I recommend using all different colors. If you only want to use a single color, I recommend against using green peppers.
They’re noticeably more bitter and less sweet than red, yellow, etc.
** You could also serve this in a bowl with things like sour cream, guacamole, and/or a drizzle of lime juice.
*** Things like lettuce, tomato, rice, or beans would also be great additions here.
