All About Cauliflower Beef Bowls

What Are Cauliflower Beef Bowls?

They are bowls filled with riced cauliflower, cooked ground beef, and various other additions. Because they use riced cauliflower instead of traditional rice, they are more healthy. They also have a range of other healthy additions to choose from, including vegetables and sauces.

Why I Made Them

I wanted a new way to use riced cauliflower, since I think it’s an easy way of eating more healthfully. I also had some ground beef patties to use up, and they were perfect for this.

How to Make Them Vegan

You can make these into vegan bowls quite easily.

Just replace the ground beef with vegan crumbles, mushrooms, or even seitan. You’ll also want to replace the beef broth with either mushroom broth, a roasted onion broth, or any savory vegan broth.

What You Need to Make Them

You’ll need cauliflower, ground beef or a vegan substitute, and your choice of sauce. You’ll probably want some additional toppings as well, which I talk about below.

If you don’t have any sauce on hand, the recipe includes steps for making a savory beef sauce.

Why You Should Make Them

They’re easy to make and are moderately healthy. They’re also very customizable, with a near infinite number of extras to be added.

What Can Go Wrong

  1. If you don’t brown your beef well enough, the sauce may be lacking in flavor.

  2. If you don’t cook the cauliflower long enough, it may have a raw taste or texture.

  3. If you don’t stir the sauce just before adding it to the pan, it may not thicken properly.

What I Would Change

I would probably use more cauliflower. I think the bowl pictured actually used closer to 2 cups, which felt like a bit much, so maybe try 1.5 cups instead.

I don’t recommend using raw spicy peppers. The bowl pictured has diced jalapeno, which was a bit too strong even after removing the seeds/ribs.

If you want to use something spicy, I recommend either something pickled, or something very mild.

What Else Can I Add?

You can add just about anything you’d enjoy eating with cauliflower and beef. Here’s a small list of considerations:

  1. Sour cream or yogurt

  2. Diced avocado

  3. Diced tomatoes

  4. Diced peppers (either sweet or spicy)

  5. shredded lettuce

Ingredients

For the bowl: 1 cup riced cauliflower, 120 grams 1/2 tsp kosher salt, 3 grams 1/4 lb lean ground beef patty*, 113 grams For the sauce: 1/4 cup beef broth, 55 grams 1 tsp ketchup, 6 grams 1 tsp sugar, 5 grams 1 tsp corn starch, 3 grams 1/2 tsp kosher salt, 3 grams 1/2 tsp hot sauce, 2.5 grams 1/2 tsp garlic powder, 2 grams 1/2 tsp soy sauce, 2.5 grams Pinch of black pepper, about 1/4 tsp

Makes one large bowl

Preparation

Cook the beef patty over medium heat until well-browned and cooked through, about 5 minutes per side**. Remove the beef, then cook the cauliflower rice over medium heat with the salt until softened. Remove the cauliflower, then add the sauce*** to the pan and stir until thickened. Add the beef and cauliflower to a bowl, then pour over the thickened sauce. Top with other additions, as desired.

Notes

* You can also use 1/4 lb of ground beef. However, I find the flat surface of a burger patty makes the browning faster and easier. ** Once both sides are browned, crumble the meat in the pan. You can also remove it now and crumble it later. *** be sure to combine all the “sauce” ingredients at some point Also be sure to stir them again just before combining – especially any corn starch that’s settled to the bottom.
