Introduction
These bacon cheesefries may not be fancy, but they sure are tasty. They take a host of hearty ingredients like bacon, cheese and french fries, and maximize their deliciousness with a few simple tricks.
What You’ll Need to Make Them
To make these fries, you really only need cheese, bacon and potatoes (or prepared french fries).
For the cheese, anything shredded will work. If you only have a block of cheese, you can shred that yourself and use it as well.
For the bacon, I recommend raw, uncooked bacon. You can technically use cooked bacon, but the technique will differ slightly if you do.
You can use prepared/frozen french fries, or whole potatoes that you’ve cut yourself. However, the recipe assumes you’re using fries that are already cooked.
If you’re starting with whole raw potatoes, you’ll want to cut them into fries and cook them beforehand.
How to Make Bacon Cheesefries
Cook the Bacon
The first step is cooking your bacon. If you’re using raw bacon, cook it in a pan until it’s browned and the fat renders out. You’ll be cooking the fries in the bacon fat, so be sure not to drain it out.
Cook the Fries
Whether you’re using fresh or frozen fries, cook them in the bacon fat. Frozen fries will take a bit longer to cook and crisp up, but they’re very convenient (and what I normally use).
Cheese, Bacon, and Heat
Once the fries are browned, top them with bacon and cheese and cover them; cook until the cheese is melted. If your pan is broiler-safe, you can also broil everything for a minute or two.
Sauce?
Unless you’re up for making some easy fry sauce, these bacon cheesefries are ready to enjoy.

Ingredients
1/2 lb french fries, cooked*
4 oz raw bacon, roughly chopped
1/3 cup shredded cheese, 28 grams (plus more if desired)
Preparation
Cook the bacon in a large pan over medium heat until browned and crisp. Remove from heat and set on paper towels to drain.
Add the french fries** and cook until browned, crispy and heated through, about 10 minutes.
Add the cheese and bacon to the cooked fries, then cover*** and cook until the cheese is melted.
Notes
* I recommend using frozen french fries for this. However, you can use any fully-cooked potato that’s roughly french-fry shaped.
** Since frozen french fries contain a good amount of water, there will likely be some splashing due to the oil/water interacting, so proceed with caution.
*** I recommend lowering your heat and possibly adding a bit of water (for steam) to help things heat through.
