Chicken Vegetable Sheet Pan Dinner

This chicken vegetable sheet pan dinner is unbeatable for fast and balanced weeknight meals. It has a good mix of relatively healthy ingredients, and comes together very quickly.

Unlike some sheet pan meals, you don’t need to time the ingredients; everything cooks for the same amount of time, on the same pan. It really couldn’t be easier.


What Are Sheet Pan Dinners?


Sheet pan dinners are a popular way of quickly making balanced meals on busy weeknights. They involve using one or more sheet pans and using them in an oven, which takes care of all the cooking. This gives you meals that are healthy, easy, and relatively fast to make.

What You Need to Make It


To make this sheet pan dinner, you’ll need things like onion, broccoli, and chicken breast.


Onion


You can use just about any normal variety of onion, like white, yellow, or red. I personally used yellow, but the cook time should be pretty similar across onions.


Broccoli


You could probably use cauliflower instead of broccoli, but I haven’t personally tried it for this. Roasted broccoli is really great though, so I recommend trying it – especially if you’re not a huge broccoli fan.

Chicken


The chicken is probably the most volatile ingredient in this recipe.


You’ll want to use chicken breast, and you don’t want them too large. If they’re too big, they won’t cook before the vegetables begin to burn.


I recommend against using chicken thighs here. They’re great for many applications, but the cook time for this recipe is too short to bring out their best qualities.

How to Make This Sheet Pan Dinner

Oil and Season

The first step for making this recipe is oiling and seasoning the chicken and vegetables. You can season them with whatever you want, but the recipe just calls for salt and pepper.

Cook and Serve

The only other step is cooking the food. Simply place the vegetables on a sheet pan, top with the chicken, then cook until done.

While the food is good on its own, it wouldn’t hurt to make a quick sauce to go with it.

Ingredients

1 lb boneless skinless chicken breast, 454 grams

2 broccoli crowns, trimmed

1 medium yellow onion, cut into chunks

2 Tbsps vegetable oil, 28 grams

1 1/2 tsps kosher salt, 9 grams

Large pinch of black pepper, about 1/2 tsp

Makes 3 modest servings

Preparation

Cover your chicken in 1 Tbsp of oil, 1 tsp of salt, and half the black pepper. Cover your vegetables in the remaining oil and seasonings.

Spread vegetables and chicken on a baking sheet, then bake at 400 F (204 C) for about 20 minutes or until the chicken is cooked through.
