Bananabread Oatmeal

I’ve never been much of an oatmeal eater. It’s fine enough, especially with salt+butter or fresh fruit, but it’s only ever fine. However, I think this bananabread oatmeal changes that. It’s great in its own right, but it’s also great oatmeal. I never thought I’d use those words together, but there it is.

The cooking procedure is as simple as it gets, but there are some things to keep in mind. If your bananas aren’t especially ripe, you may need a bit more sugar. You can also use something like oat milk to make this vegan. The flavor will change, but the end result should be tasty regardless.

It’s not called for in the recipe, but I think peanut butter would be a great addition. Maybe even chocolate chips for something closer to dessert.

Ingredients

2 ripe bananas, 220 grams

1 cup instant oats*, 85 grams

2 Tbsps packed brown sugar, 30 grams

2 cups whole milk, 480 grams

Dash of vanilla extract, about 1/2 tsp

1/4 cup roughly chopped walnuts, 29 grams

Pinch of kosher salt, about 1/4 tsp

Makes 2 moderate bowls of oatmeal

Preparation

Heat the milk, salt and sugar in a medium sauce pan over medium-low heat. Once the milk is hot, add the oats and heat until cooked through.

Add your bananas and mash with a potato masher** until smooth. Turn off the heat, add your vanilla and walnuts, stir and serve. Serve hot***.

Notes

* You can probably use rolled oats for this, but they’ll take longer to cook. You also may need to add more liquid to make up for evaporation. In that case, I’d probably add more milk.

** As usual, you don’t need a potato masher for this. However, it makes things much faster, easier and enjoyable. If you want to use something like a fork, I recommend mashing it in a bowl rather than the pan. Then just add the mashed ingredients to the pan once the oats are cooked.

*** For some reason I thought this might be fine cold. It wasn’t. Room temperature probably wouldn’t be great, either. If you actually want to enjoy your food, please only eat this hot. Or warm. But not cold. Please.
