Breakfast is arguably the most difficult meal to plan for. Since it’s eaten early in the day, you rarely have time to “get it together” before your day begins. Thankfully, there are ways of making breakfast not only fast and easy, but healthy, too.
With this post, I’m showing you 3 recipes for easy, healthy breakfast toasts you can prepare in just a few minutes. They don’t require any cooking besides toasting the bread, and if you’re really pressed for time, they’re also portable.
Ingredients You’ll Need to Make Them
The only ingredient you truly need to make these is bread. Much like my three oatmeals, these recipes are more like suggestions than strict recipes.
If you want to follow these recipes exactly, you’ll need things like cream cheese, fruit and honey. If you try them for yourself and think something would work better for you, go ahead and try it; chances are it’ll still be great.
Picking the Best Bread
Not only is bread the bare minimum for making toast, it’s easily the most important from a health perspective. The nutritional difference between a white bread and something like a dark multigrain is sure to be substantial. Almost certainly more than a difference in fruits or nuts, at any rate.

Blueberry Cashew Toast
Ingredients
2 slices of bread*
Blueberries**, as needed
Cashews, as needed
Cream cheese, softened, as needed
Preparation
Toast your bread using a toaster or in a pan, if desired. Spread with softened cream cheese, then top with cashews and blueberries.
Honey Apple Toast
Ingredients
2 slices of bread
1 apple, sliced thin
Ricotta cheese, as needed
Honey, as needed
Preparation
Toast your bread using a toaster or in a pan. Spread with ricotta cheese, then top with sliced apple. Drizzle with honey, then serve.
Peanut Butter Banana Toast
Ingredients
2 slices of bread
Peanut butter***, as needed
1 banana, sliced
Preparation
Toast the bread with a toaster or in a pan. Once toasted, spread with peanut butter and top with sliced banana.
Notes
* If you want a lower-calorie toast, I recommend using a thin-sliced bread.
** Unless blueberries are in season, I recommend using frozen blueberries. Not only will they last longer, but they’ll likely be more nutritious.
*** For best results, use a natural peanut butter. You can tell if one is natural by looking at the ingredients. The only ingredients should be peanuts, and maybe salt.
